Take Chum Buckets buggy and drive to a mine field, the dog will start barking at the location of a mine also facing the direction the said mine is in.

Complete the first four story missions and then a side quest will be offered by Chum to retrieve the dog and buggy.
I think it was also the case for that mission, but you should be able to open up the game map and look for a blue or green dot that marks quest objective locations.

I mean...I've unlocked him in the Jeet's base, but i don't know how to "equip" him on the car.

Thus I am unable to clear any minefields. I n this episode 16 of Mad Max. It will list all missions you've encountered, where you are in it's progression and what you need to do next. Progress in the story, eventually a mission will pop up giving you the option to do so. Hope this helps. I am almost through the game.
