The cookies were baked and looked crispy, but did not hold together at all. However, they  keep well in a covered container for a few days, but will soften slightly. Woo-hoo! Even before baking the batter appeared weak (gooey and thin for an oatmeal cookie) and I questioned whether the result would be good, and it wasn’t. I plan to melt down dark chocolate to drizzle over them to add flavor. Classic oatmeal cookies involve LOTS of brown sugar and  butter. This happens with every oatmeal cookie recipe. Clearly this recipe works because you and others have had had success but I can’t tell where I might have gone wrong. I make this every week for my daughter’s lunchbox (I use spelt flour and a bit less sugar) and would love to freeze the mixture to only have to bake it each week rather than make the dough as well . These oatmeal cookies are easy to make and don't require any baking. You could possibly try regular flour, gluten-free all-purpose or almond flour, but you might need to alter the amount.
